Persian Mint & Apricot couscous: A flavouresome and mild (no chilli) couscous blend with Baharat Middle Eastern spice, dried apricots and dried mint leaves, with a pinch of Himalayan salt. Goes well with any meat as a side dish or can be made up as a salad. Easy to make and ready in 5 minutes.
Equal amounts of hot reduced-salt stock of your choice, bring to the boil, add the couscous, cover and leave for five minutes. Add a knob of butter and you are good to go. Couscous is one of the easiest things to make and should be a staple in every pantry.
